Winemaker's Tasting Note
Theis wine exhibits a dark plum colour in the centre with a bright ruby rim. The nose has Chistmas cake aromas with dark cherries, blackcurrant and a hint of mint. This is balanced by notes of dark cocoa and savoury meats with hints of cedar to compliment this complex nose.

The flavours are full, rich and lingering. The wine enters the palate with flavours of dark black fruits, savoury meats and dried herbs. The mid palate is full and rich with a fine texture. The tannins are firm and dry which offers an exceptionally long finish which exhibits a hint of black olives.
Serving Suggestions
Serve with smoked meats, venison pie, beef fillet with a red wine sauce or an oxtail stew made in an Osso Bucco style.

The wine also pairs well with hard cheeses.

To be enjoyed immediately after release but will improve with cellaring for up to 12 years from harvest.
